New Video: Stuffed Poblano Recipe
I have just finally finished editing a new video for you all. Here is my recipe for stuffed poblano peppers. This has become one of my favorite meals and its actually something that I have never had in a restaurant. I will also be putting together a day of eating video that I have been recording today with an amazing frittata recipe. Thanks as always and I look forward to hearing from all of you!

New Shopping Video
Hey guys and gals. It Saturday and I am getting caught up on some videos. This one didn’t really need a voice over so I was able to work on it while I was watching the Penguins game. I posted earlier about my trip to Sur La Table and World Market and here is the video of everything that I picked up. Check it out and let me know what you think, other than the audio is kind of crappy.
Tuna Casserole Video!
Finally starting to make some progress on the videos! I got the Tuna Casserole video posted today. It turns out the microphone I got does’t work with my new iMac so I am going to have to go pick up a new one tomorrow to do some of the voice over work for the rest of the ones I have prepared. Holy Cannoli!
I was inspired by yesterdays pork pastries to try some cannolis. Needless to say these came out amazing! This was my first time making protein fluff or cannolis. The macros for the entire dish was 39c/7f/37p. You can also cut some of that out by not using the topping which is 7c/5f/1p. Also you can try something other than milk for the liquid in the fluff.
How did I make it?
Protein Fluff:
In a standing mixer combined 1 scoop of Cellucor Vanilla whey, 1.5tsp Xanthum gum, and one cup of skim milk. Blend to desired fluffiness.
For the shells:
Cut the Mountain Bread to the desired lengths and roll around your finger. I am still trying to find better ways to roll. Apply some water to the last corner to help it stick and keep the roll together. Heat in pan till crispy. Store in fridge till ready to fill.
Putting it all together:
Using a piping bag load the fluff into the bag and slowly pipe the filling while pulling out the tip slowly as it fills. Turn the cannoli around and do the say to get a full fill. Repeat for each shell. Mix the Whipped Cream Cheese and Preserves and spread on top. Thats all there is to it all thats left is to enjoy! I will be experimenting with different flavor filling and might add a little Splenda to the fluff for a bit more sweetness. One of the advantages of this was there was still a TON of fluff left so even though the cannolis alone were filling I still had a treat left after and poured a little pancake syrup in the fluff and now I am stuffed! - Piped the fluff into the cannolis. The shell was made of Mountain Bread.
- I then mixed 17g of raspberry preserves and 22g of whipped cream cheese to make the topping.
New Computer Mean New Videos!
Well guys I got my new iMac 27″ setup and put together a couple of videos. Its weird using a Mac for the first time since elementary school and considering I actually work for Microsoft I have to say I like the hardware but the OS is going to take sometime. While the videos I posted are getting better I am still deciding on editing software to make them better between Adobe and Final cut.
Lets get the videos going!
First I posted up my pork and sauerkraut cooking video. This is a quick and easy way to have a large amount of meals ready to go for the week using a slow cooker.
Next I put together my Shopping2Fit series first episode. I recorded what I picked up at Whole Foods the other day and got some pretty good stuff for pizza and other foods.

New Logo and Video
Today I got the final version of the Cookingtofit logo. Ready to start promoting the site and trying to get people involved. Also just finished uploading a video to the YouTube channel with my coleslaw recipe. I have posted it at the bottom. Don’t forget to check out the channel and subscribe for updates. I also have some other video that I have been promising that I will get up this week but I want to get a microphone so that I can get the voice over done right. First Day of Eating and First Upload
Today is a pretty big day for this blog/channel. I managed to get my first video up on YouTube. I picked up a GoPro so you can look forward to a lot more videos now that I have the confidence in myself as I get leaner. The video can be found here: https://www.youtube.com/watch?v=n5RwYC-QJTQ. Keep in mind it is my first post and is a bit raw. It is a recipe for the cake that I had for dinner today.
For my day of eating I started the day off with some pumpkin pancakes. I recorded a video for these but haven’t had a chance to edit it yet and not sure about the quality. Here is the recipe and macros. I usually use whole wheat flour but decided to try something different today:
Ingredients:Salad for dinner with omelet
244g Pumpkin
4g baking powder
1/2cup of unsweetened almond milk
1 scoop Cellucor Cinnamon Swirl
184g egg whites
30g coconut flour
16C/8F/52P
Whisk everything together and cook over medium high heat about 2-3 minutes each side..
For the topping I mixed Fage 0, Polaner Sugar Free Raspberry Preserves, and both Whipped and Fat Free Cream Cheese. 14C/5F/17P
For mid-morning I had a salad with butter lettuce, tuna, spaghetti squash, and some sauerkraut with some Waldens farm bacon ranch. 16C/2f/22P
Lunch was another salad with baby spinach, mushrooms, Nasoya shirataki noodles, spaghetti squash, ground elk, sauerkraut, and some Waldens Farms 1000 Island. 18C/10F/38P.
Guess what I had for dinner! A salad with baby spinach and sauerkraut. On top of that I made an omelet with 2 whole eggs, 4 egg whites, mushrooms and pork tenderloin and added some Waldens Farms. 11C/21F/69P.
For dessert I had another salad. Just kidding! I made a POV cake. I posted the video of it to Youtube as I mentioned above but the macros were 18C/6F/31P
The pork and sauerkraut I made in my slow cooker yesterday and they came out amazing. I’ll post a video of how I make it when I run out.
